Cuisine
Japanese cuisine prepared with fresh natural delicacies from the mountains and the sea, together with the chef’s passion
The southern part of Nagano Prefecture in Japan, where we are located,
is surrounded by mountains, but is also close to the sea,
so we are able to acquire fresh, seasonal ingredients from the mountains and the sea.
We offer Shinshu Kaiseki cuisine on a monthly rotating basis.
If you have any food allergies, please let us know in advance, and we will do our best to accommodate them.

Greeting from the head chef
I started cooking in elementary school because of my admiration for my father, who was a head chef at a ryokan. After entering university, I followed in my father’s footsteps and became a chef.
After training at a restaurant primarily serving Kyoto cuisine in Hida-Takayama, I joined Sekitaitei Ishida to become Head Chef Nagata’s right-hand man. After 10 years of training under Head Chef Osada, I assumed the position of Head Chef at Sekitaitei Ishida.
Using traditional Japanese culture and seasonal ingredients, we offer dishes made with care and attention that will leave a lasting impression on your memories of your trip.
